Heavenly Broccoli & Cheese Soup

I made some homemade Broccoli & Cheese Soup this morning and I must say, it was HEAVENLY!! :o)

Below is the recipe so enjoy!

4 servings (I doubled my recipe)

Ingredients

1 tablespoon melted butter
1/2 medium onion ~ chopped
1/4 cup melted butter
1/4 cup flour
2 cups half-and-half cream
2 cups chicken stock
1/2 lb fresh broccoli

2 cloves of garlic

1 cup carrots, julienned
1/4 teaspoon nutmeg
8 ounces grated sharp cheddar cheese
salt and pepper

Directions

1) Saute inion in 1 tablespoon butter. Set Aside.

2) Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add the half-and-half

3) Add the chicken stock. Simmer for 20 minutes.

4) Add the broccoli, carrots, garlic, and onions. Cook over low heat for 20-25 minutes.

5) Add salt and pepper. Can be pureed in a blender but I like the chunkier broccoli. Return to heat and add cheese. Stir in nutmeg.

Annnndddd viola!! :o)

I absolutely LOVE this! It made me think about some of them and look at things a little differently. Please read this and take it to heart because sometimes, we go through things in life and we need to remember, it could be a lot worse and be thankful for what we have.

I always keep up with the current recalls going on!! You can join this website http://www.modernmom.com/recalls and they send emails with all of the recalls. It's not just limited to kids stuff so take a looksy ;o) In this issue, there are some recalls for light bulbs, chives, a stroller, MORE Johnson & Johnson Meds (Thankfully I just try not to use ANYTHING FROM J&J anymore), and slipper socks.

I found out through here that Kylan's stroller was recalled due to strangulation. They sent out a kit to fix it BUT you won't catch me using that stroller ever again!!

Licorice, Anyone???

I was just reading a report on how licorice can be good for you. Now, don't just hop up and go run to the store to get you some. It's not just any licorice, it's just the black licorice. Blugghhhh I personally am not a fan of the black licorice. But reading how it can help you, I might just have to grow a taste for it.

Black licorice has dated back all the way to the ancient Greeks, to the Chinese Emperors and to Egypt's King Tutankhamen. Hundreds of years ago, it was used as an antiviral medicine, has tons of antioxidants and estrogen. WHAT?? ESTROGEN??? Yep, estrogen.

It can help with:

PMS:

Believe it or not, you can treat menstrual problems and PMS with this. I wonder if this works on men for PMS?? Ha!! Anyway, it has a mild estrogenic effect. Because estrogen can cause many menstrual problems, licorice has been known to balance estrogen levels in the body and by reducing estrogen, which in turn helps with bloating, irritability, and tenderness.

Peptic Ulcers:

If you have an ulcer or an upset tummy, Europe has used licorice for many years to help people with their ulcers. It's know to lower the acid in your stomach and help relieve heartburn as well. Studies have shown that it is just as effective as a pharmaceutical drug.

Respiratory System:

Having trouble kicking that cough? Licorice has been known to help with respiratory problems such as coughing, sore throats, bronchitis, or asthma. It gives you an immunity boost! :o)

Cholesterol:

This appealed to me because I recently went to the doctor for a checkup. He wanted to check my cholesterol levels and well, I got a call saying that it was a little high. On a study of about 20 students, it showed that licorice made their LDL (bad) cholesterol resistant to oxidation!

Now with that being said, there are some downfalls. Experts say you are not supposed to consume more then 50 grams of real licorice a day and you shouldn't use it long term. It can cause water retention and high blood pressure. Also, if you are pregnant, you are advised to NOT eat licorice. Eating licorice while pregnant has been link to premature births.

Look for the REAL licorice. Not the stuff that has tons of sugar and artificial sweeteners in it. You should look for Licorice Root or Glycyrrhizin.

Now I know I am going to have to try and develop a taste for real licorice. We shall see ;o)

Well, it's probably been a good month since we went to see the monster trucks! It's just been one crazy household lately ;o) I'm going to get straight to the point and start posting pics!

I have TONS of pictures but I am going to skip to the end. This one below was the last one of the show. We were the last show of the weekend so I guess he want to get crazy. It made for an interesting end though! ;o)

And this was the end result! It crashed and the front end blew up. You could hear the whole crowd grasp!! We then had to explain to Kylan how that was "supposed" to happen!! Thankfully, the guy got and and walked away. He was just fine!! :o)

Anyway, that's all for tonight folks! I am beat and ready to do a little relaxing. Can't wait for this weekend! First Monday Trade Days (Canton) and a baby shower on Sunday! Everyone have a great evening! :o)

Our week and a half of snow and ice...

This past week and a half of snow and ice has been LOOONNNGGGG! At the beginning of last week, we got some ice and a little snow. It got better but schools were still out due to the frigid temps and "rolling blackouts" happening. Then on Friday, we got around 7 inches of snow, which really is starting to become the norm in Texas. It made me really want to go skiing again!! Well, sledding down a hill had to do ;o)

And yes, that is a float!! Bahahaha I think we need to invest in some actual sleds since we have gotten snow the past couple of years :o)

Check this article out! I like to read other people's blogs and I always thought it was weird how there was so many cases of childhood cancer. I never knew until a year and a half ago why there was such an outbreak. I also found out recently that cancer in kids has gone up 420% in the past 20 years. Yes, I said 420%. I never knew that was a statistic but scary enough, it is :o( I'm so glad I am doing what I can to change our lifestyle to be healthier and safer for my family!!

Well, it's been 3 years in a row that we have gotten snow! In Texas, we usually just don't get much snow. Maybe a dusting here and there and some ice but a couple inches of snow??? Anyway, seeing all this snow really got me itching to go skiing again!! Grrrrrr We were at Scott's grandfather's house for his birthday so all the family was there. All the kids got out there and had a huge snowball fight. (Including Kylan) Thankfully his snow jacket still fit and his gloves, but the boots, not so much. His mud boots had to do!! ;o) Let's get on to the pics :o)

Fredericksburg

Whew, it's been a while!!! I just feel like it's been so crazy around here for some reason. Maybe since it's December and the Holidays are here ;o)

Well, Scott and I needed a little weekend away so we took a little trip to Fredericksburg the first weekend in December. It was so nice to just get away, relax, do what we want!! We went a couple of years ago and I LOVED it. The little shops are so cute and the town was decorated for Christmas so it got me in the mood for the Holidays.

We ended up lounging around, doing a little shopping, and went to Enchanted Rock. The part I was really excited about was the drive up there. The first time we went, we went through some beautiful hills. I couldn't get to my camera in time so I was excited to go through there and get some pics. Wellllllll, the Garmin lady decided to take us a different route. :o( Instead we were going through the back roads through some scary looking places. Looked like something off of the movie Wrong Turn!!! LOL

We got there and this was our little cabin :o) So cute!

We were told that our cabin was the closest to the Elk pen so once we got there, this is one of the first things we saw :o)

Looks like I was having a conversation with it!!

I don't know if you have ever heard how an Elk sounds but it's the strangest noise! I would have never imagined they sounded like that!!! LOL I wish I could of caught it on video. It's very strange! ;o)

We also had TONS of deer around!!

It's a baby deer! It was so cute :o)

Scott was trying soooo hard to get this peacock to spread it's feathers, never happened!! :o(

Saturday morning, we woke up and went to Enchanted Rock. Enchanted Rock is a HUGE pink granite rock formation that's been around for thousands of years. Anyway, it was a gorgeous day, I think in the 70's. We had planned on doing this last time but it was too cold. We will definitely do this again when we go back :o) The pictures start with the drive up there. Very pretty 15-20 minute drive!

And yes, it was that steep in some spots:

It was a good little workout! I wish we lived closer so I could just got and climb it everyday!! I really enjoyed it :o)

I had a little anxiety, ok A LOT, about the drop offs and the steepness but I worked through it!! LOL

We made it to the top in no time. I kind of wish we would have slowed down some to take in the views a little more!! **Ahhhhh Hum** (Scott)

I just couldn't seem to move it!! ;o)

Anyway, I have many more pictures but I am going to stop at this!! Maybe next time, Scott and I will go back to do wineries (when the grapes are out) and do the Rock again :o)

The hard candy was shaped like a “J” to represent that Jesus is our rock of all ages. The candy was made of white to stand for the pureness of Jesus. The red represents the blood that Jesus shed to save us from our sins.

So the next time you see a candy cane take a minute to remember the real meaning of Christmas.

We did our pumpkin carving this past weekend!! I have to catch it on video because of last years HILARIOUS video. First you have to watch last years pumpkin debacle:

John is the kind of guy you love to hate. He is always in a good mood and always has something positive to say. When someone would ask him how he was doing, he would reply, 'If I were any better, I would be twins!'

He was a natural motivator.

If an employee was having a bad day, John was there telling the employee how to look on the positive side of the situation.

Seeing this style really made me curious, so one day I went up and asked him, 'I don't get it!'

'Y ou can't be a positive person all of the time.

How do you do it?'

He replied, 'Each morning I wake up and say to myself, you have two choices today. You can choose to be in a good mood or...you can choose

to be in a bad mood

I choose to be in a good mood.'

Each time something bad happens, I can choose to be a victim or...I can choose to learn from it. I choose to learn from it.

Every time someone comes to me complaining, I can choose to accept their complaining or...I can point out the positive side of life. I choose the positive side of life.

'Yeah, right, it's not that easy,' I protested.

After 18 hours of surgery and weeks of intensive care, he was released from the hospital with rods placed in his back.

I saw him about six months after the accident.

When I asked him how he was, he replied, 'If I were any better, I'd be twins...Wanna see my scars?'

I declined to see his wounds, but I did ask him what had gone through his mind as the accident took place.

'The first thing that went through my mind was the well-being of my soon-to-be born daughter,' he replied. 'Then, as I lay on the ground, I remembered that I had two choices: I could choose to live or...I could choose to die. I chose to live.'

'Weren't you scared? Did you lose consciousness?' I asked.

He continued, '...the paramedics were great.

They kept telling me I was going to be fine. But when they wheeled me into the ER and I saw the expressions on the faces of the doctors and nurses, I got really scared. In their eyes, I read 'he's a dead man'. I knew I needed to take action.'

'What did you do?' I asked.

'Well, there was a big burly nurse shouting questions at me,' said John. 'She asked if I was allergic to anything 'Yes, I replied.' The doctors and nurses stopped working as they waited for my reply. I took a deep breath and yelled, 'Gravity''

Over their laughter, I told them, 'I am choosing to live. Operate on me as if I am alive, not dead.'

He lived, thanks to the skill of his doctors, but also because of his amazing attitude....I learned from him that every day we have the choice to live fully.

Attitude, after all, is everything .

It's been a while!!! I have totally forgotten about this little blog!! :-S haha

This post is mostly going to be about Kylan's 3rd birthday party. As we all know, Kylan turned 3 on September 22nd. I had been planning his party for a couple of months, trying to steer him away from the "Tractor Theme", but no such luck. It was a toss up between fire trucks or tractors. Of course, he wanted tractors. It was really kind of hard to find the kind of tractor I wanted. I wanted the tractor that was the same colors as John Deere (green and yellow) but wanted it to look more like a vintage tractor. Thanks to Erika, she told me that she gets all her birthday stuff from Ebay. After a month or two of searching for the right tractor, I found one for a good price on Ebay!!! My thing was I didn't want to pay a fortune for invitations.

(Of course I erased the address!!)

She also made these cute little goody bag labels to match the invites :-)

Anyway, it was a pretty good day and Kylan got LOTS of presents (which are now all over the house) :-) We had to do a few adjustments since the weather didn't pan out the way it was supposed to but overall, it was a good day!!

Well, it has been 2 wks and I am FINALLY posting my Salt Lake City, Utah pictures! I am a slacker, I know ;-) As you all know, I am an Internet CEO Mom and I LOVE working from home. Well, Convention was in the middle of August and I had a chance to go. At first I was REALLY scared about traveling by myself but once I did it,it was really peaceful. I could and will definitely do it again next year when Convention is in Minneapolis! I got to meet some of the people that I talk to on a daily basis and it was so much fun!!! I thought it was going to be like an awkward first blind date but it really wasn't. I guess because I have talked to them so much that we are all just naturally friends :-) I could go on and on so lets get to the pictures:

Kylan just didn't understand that I was going on an airplane and he wasn't so I had to make a chart:

These are the views from Sarah's house! She lives about 20 or so minutes from Salt Lake City in the mountains and I absolutely LOVED it! I could definitely live there. The only thing stopping me from moving there is family that lives here. The weather was perfect and the view was just gorgeous!! I seriously fell in love with that place!

You know, ever since Kylan was born, he's ALWAYS swinging those arms. Ever since he was able to throw things, he's always chunked them in a way that you have to duck for cover. Let's just say he's ALWAYS had an arm on him. Give him a ball with a little weight to it and it will end up across the house. We caught a little video of him doing this. It's one of those little squishy balls so it doesn't go very far. If we were to give him an actual ball, something would end up broken!! ;-) Anyway, here it is :-)

I received an advertisement in the mail back in April I think about the Circus coming to the American Airlines Center and ever since then, I wanted to take Kylan. I knew he would like it just because he LOVES animals. Anyway, we went last Thursday and here are some of the pics!! :-)

Last week we took Kylan to the Ft. Worth Zoo before Scott went back to school! I must say it's nicer, much shadier, and a lot more animals but I have to say that Dallas' facilities are cleaner. We had a fun time though :-)

Easter 2010

Well, I am finally getting around to my Easter post!!! :-S Sorry it took sooooo long :-)

Saturday, was an impromptu visit to Canton! Scott volunteered me to drive his mom and sister to Canton, which was fine because it meant a trip for me, and so in return, I volunteered Scott and Kylan to go to Wills Point with Scott's dad to take cows!! :-) Kylan LOVES being Pappy's Right Hand Man!! :-) Then after getting back, we went to Scott's mom and dad's to color some Easter eggs. This year was the first year that Kylan could really be interested in it. I will just let the pics explain ;-)

And then it soon ended with this! He just wasn't very interested!! haha Oh well, maybe next year :-)

The next morning, we got up and the Easter bunny visited.

We then rushed off to Easter Mass and then after, went to feed the ducks some of the old bread we had. We then went home and Kylan and I took a little nap! I LOVE naps but unfortunately, I really don't get those anymore :-( I am definitely someone who LOVES their sleep and could sleep all the time if you would let me :-) We got up in about enough time to get ready to start our Easter Festivities. We then headed over to Grandpa's. Kylan had a blast as usual with all the kiddos around.

Queenie's Easter Party!

Yesterday was Kylan's little Easter Egg Hunt at "Baby School" (as he calls it!) He had so much fun! Of course, Queenie was trying to get them to show us how to do the Hokie Pokie and Kylan was too busy showing off for us and was really concentrating on showing us that :-) He had a blast hunting eggs with Kylee. Kylee is 4 this is the one that he has a "Love/Hate" relationship with. She was so sweet though, giving him some of her eggs and if she found a fruit snack and then found another, she would give it to him. Here are some pics from his little party!

A little practice...

This past weekend was beautiful! I can't wait for this week, supposed to be in the 70's and 80's :-) Perfect weather for me! Anyway, this past weekend we went to some friend's of ours and they do an annual Easter Egg Hunt for the kiddos. Started out a little cool but it turned out to be a nice day :-) Kylan got TONS of eggs and got out a lot of energy.

He got so many eggs I had to go get a bag out of my car. Maybe I need to invest in a bigger basket for him!! :-)

He wanted to ride this bike so bad but his little legs just weren't long enough :-(

Some of the other kids made a creation in the sand box and I think it was itching Kylan that all these sticks were in there. He was trying to remove them!!

Back at home to relax. Guess he felt like he needed to be a reindeer!

We get to do another Easter Egg Hunt at his babysitters on Thursday. Should be a lot of fun. I do need to make sure and bring the camera. There is a girl named Kylee there and he is always talking about her. You see, they have this "Love/Hate" relationship!! They are always trying to compete and picking on each other, or at least Kylan picks on her, but he sure does talk about her a lot!

Here are some pics from Macie and Mia's family birthday party a couple weeks ago. Unfortunately, Macie's skate party got cancelled. Everyone was on spring break so most of her friends were out of town. But we did lots of jumping and playing :-)

Mrs. Emeleen Maliska (Grandma) went to be in the loving and comforting arms of God on Monday evening, March 15th. She lost her battle with Cancer and she will be GREATLY missed. I know she will still be watching all the grandkids and the great grandkids running and playing with all the balls. She did state on Sunday that she loved to watch all the kids play. :-) I loved you like you were my own grandmother and I am soooo blessed to have known you and for Kylan to have known you. He will never forget his Grandma!

We Love and Miss you Grandma and you are now in Beautiful Heaven!

While coming to Rockwall this past weekend to one of my little niece's birthday party at ASI, I was sitting in the HORRIBLE traffic for an hour and I spotted something on the horizon! I sooooo desperately wanted to get closer to see what it was because I was stuck on the bridge but was not close enough to tell what it was. Finally, right when I was about to exit, I see this...

That's right, no need to wipe your eyes, it's a car that was made into a boat! It was so cute :-) I had to double take, then scramble to get my camera!! Kylan was asleep so he didn't get to see it. Thank goodness, he might think that all cars can go in the water!! :-S

Anyway, after sitting in traffic for an hour, there wasn't much time left to be at Mia's party so I captured a few images with him and his 2 girl cousins! I was really kind of scared that he would be upset if max (his boy cousin) wasn't there because he had been saying all morning, "I need to go get ready to see Max and Ruby!" Those of yall that are parents probably know that Max and Ruby is a cartoon. I guess all he could remember of his cousin's names where Max and not Macie and Mia!! We definitely need to work that out Reagan so he will always remember his cousin's names. (i.e. see more of each other, Rockwall isn't far at all!) :-) Here are some shots from that party:

Although we didn't get to play much at ASI, we went back to my sister's house and the kids got to play then!! Snow Day Part 2...

Adding on the snow pics from below. I have so many to choose from so I guess I will just start posting :-)

This was when Scott hit him in the face with a snowball. Unintentionally :-)

Well I could go on adding pictures for days but I won't!

After it was all said and done, the front yard said we had 11 inches of snow and the back said 9 inches. Either way, it was WAYYYYYY more than what we are used to. We had a BLAST though :-)

Speaking of Colorado.... (Part 1)

I feel like I am back there again. The weather people were saying we probably wouldn't get much yesterday and then last night we were supposed to get 2-4 inches and it has just gone up and up in inches. The last time it snowed a couple of inches is when Kylan was a baby:

And now we are experiencing it again. This time we are home and Kylan can actually enjoy it! :-) He's down for a nap now but when he wakes up, we are supposed to go pick up Taylor from school and we plan on having some fun!!! I just packed up the snow suites but I think I may need to get them back out!!!! :-S

This is just a preview. The camera is in the big truck and Scott's not here so there will be more pics to come. Especially since the snow is STILL falling :-)

I was just telling Scott that I don't remember when it has snowed this much. I think the last time it's snowed like this was in the 80's when I was young or maybe when I was in high school. I may be wrong but here is a pic of when I was young. I was standing here with my dad in our old front yard at the house in Mesquite. Don't you just LOVE the 80's attire and the shingles in the yard!!! hahahahahaha

I think this was probably the same storm. This was Scott (in his famous blue pants) with his snowman :-) (I wonder is his mom still has those pants ;-))

Well, I am going to relax while Kylan is down and I will put more pics up when Scott get home with the camera :-)

was 2 weeks ago! :-s I have been slacking. We went to Colorado to see some snow and I LOVED it! We took skiing lessons. I was really nervous about it but I stepped out of my comfort zone and did it and I LOVED it! :-) I can't wait until we go next and get Kylan into classes. Those little kids were sooooo cute. They were better than some adults! I think if I could have just moved my house there, I would have been so happy :-) I will let the pics explain:

Saturday Night Cowboys Game!!

We went over to my sister's in Rockwall Saturday night to watch the Cowboy Game and let Kylan let out some steam. I wish we lived closer that way Kylan could be closer to his cousins, because boy does he talk about them!! Here are a few pics from the night:

He loved watching Toy Story with the girls. Mia (the one at the top of the pic) was holding Kylan's hand and I tried to run and get the camera but when I got back, no luck! :-( It was so cute :-)

Hmmmmm, maybe we should get one of these ;-) j/k

Notice the big purple and red bump on the side of his forehead! The kids were so wound up, running around like a bunch of crazy animals, and this is what resulted!! He got one on the other side and that's when we said, enough! Time to go watch a movie and calm down.

He had his little Romo jersey on that his aunt and uncle gave him for his 1st birthday but Mia got in her pj's, so Kylan had too! :-) But we did get one with his cousin Max's cowboys helmet on! Maybe I will get a pic this weekend with it on :-)

We had yummy steaks, salad and potatoes and wanted to thank them for having us over :-) We definitely need to do it more often, that is when you don't have too many tests going on Reagan! We are going to need you to get through Nursing School so we can do this more often :-)

This is a little post of random stuff! Scott has taught Kylan how to play Wii!! I was surprised, he's pretty good :-)

You know, we are having some pretty cold weather here!! The meteorologists are saying it hasn't been this cold in over 12 years. It's supposed to be in the lower 20's tomorrow and in the teens at night with a windchill of single digits or negatives!!! Well, Scott had to fix princess, oops Bandit, up outside! We would bring him in but he has soooooo much fur that he gets miserable inside because it's too hot for him. Scott built him a mansion for him to sleep in since he won't get in his doghouse:

Obviously he LOVES it :-)

This next part is really funny! We used to see this every now and then but now it's becoming a nightly occurrence. He stock-piles up all his stuffed animals that he sleeps with in the corner of his bed. It's so funny. I don't know why he does this but he does:

Now, Kylan has been a typical 2 year old these past couple of days!! We LOVE him to death but man, this boy is VERY headstrong and has a mouth on him!!!!!!! He LOVES testing our patience! People tell me all the time, "just wait until he starts talking back". My response is "what are talking about, he already does!" He hits some and we have done everything to break this habit by putting him in time-out. I have swatted his hand to show him that it hurts people when he hits and it hurts our feelings, but that didn't work. Can't really spank him because I think he is a little too young for that right now. So we started taking away his favorite toys and putting some place where he can see them. It seems like it's working some. He gets really upset when we take them so I think it may work after we do it for a couple of days. I mean, what's next? Grounding him?? hahaha Or maybe we can call Super Nanny! hahahahaha

Little Bit of New Years...

We didn't really have much plans for New Years. It seemed like everyone was wanting to stay home this year! We found out the day before that Taylor (Scott's 14 year old sister) and her friend Leah was going to watch Kylan while Scott and I went out to eat. We decided on Blue Fish!! MMMMMMMMMM Sounds so good right now! Anyway, Kylan wants to wish everyone a Happy New Years :-)

They had a blast!! We found out on the way that my sister didn't have any plans either so next year we are planning on having a little party at their house. Just us and the kiddos playing! Can't wait :-)

Saturday we went to my parents to do Christmas with my Mom's side and my sister. It was a nice cool day so Kylan went out and played with his older cousin Max, did some more eating and relaxing.
